Creamy salmon and potato bake

Serves six

Prep time: 20 minutes
Cooking time: 55 minutes

Wow your family this autumn with this tasty and creamy salmon and potato bake

YOU NEED:

  • 800g red skin potatoes
  • 200g crème fraîche
  • 1 lemon, grated zest and juice
  • 4 tbsp dill, chopped
  • 800g salmon, skinned and cubed
  • 100g spinach leaves
  • 1 drizzle olive oil

METHOD:

  1. Preheat the oven to 220C/200C fan/gas 7.
  2. Thinly slice the potatoes, approximately 2mm thick, and place in a large mixing bowl.
  3. Add the crème fraîche, grated lemon zest and juice and chopped dill.
  4. Mix well and season generously with salt and pepper.
  5. Create an even layer of cubed salmon on top of the potatoes.
  6. Season with pepper and scatter over the spinach leaves.
  7. Carefully arrange the remaining sliced potato.
  8. Drizzle with olive oil and season with salt and pepper.
  9. Bake in a preheated oven for 40-55 minutes or until golden brown.

Lamb hotpot and roast savoy wedges

Serves six

Prep time: 15 mins
Cooking time: 2 hrs 5 mins

This lamb hotpot and roast savoy wedges is perfect for the whole family to enjoy

YOU NEED:

  • 700g lamb neck fillet
  • 2 onions
  • 300g carrots
  • 1 tbsp fresh thyme
  • 1 pack fresh mint
  • 2 tbsp Worcester sauce
  • 1 vegetable stock cube
  • 1 bunch spring onion
  • 2 tbsp fresh coriander
  • 1 savoy cabbage
  • 500g potatoes
  • 25g flour

METHOD:

  1. Peel and slice the potatoes into slices 2-3mm thick.
  2. Then, chop onion and cut the carrots into chunks.
  3. Slice the neck fillet into approximately 10mm slices.
  4. Next, season and brown the neck fillet slices in a little oil and transfer to a casserole dish.
  5. Mix in the onion, carrot, a quarter of the potato slices, stock (crumbled), thyme, Worcestershire sauce and flour.
  6. Add water to a level halfway up the casserole dish.
  7. Arrange the rest of the sliced potatoes, overlapping, on the top. Add seasoning between each layer and dot with butter.
  8. Cover the dish and place in the oven at 200C for 20 minutes. Then, drop to 165C for 80 minutes.
  9. Remove the cover from the dish. If necessary, gently press the potatoes down and bake for a further 20 minutes until golden.
  10. Cut the cabbage into small wedges removing the outer leaves, then blanch in boiling water for four to five minutes.
  11. Remove the cabbage from the water and sprinkle with oil and thyme.
  12. Season and place on a baking tray for 20 minutes at 180C.
  13. Finely chop spring onion, mint and coriander. Mix well and season to taste.
  14. Serve the hotpot with the savoy wedges, and garnish with the chopped onion, mint and coriander.
