Peri pineapple chicken burger

Serves four

This recipe is the perfect summer twist to every chicken-lover’s favourite burger

Preparation time: 5 minutes

Cooking time: 35 minutes

YOU NEED:

  • 4 chicken breasts
  • 4 tbsp olive oil
  • 2 tbsp peri-peri seasoning
  • 4 mature Cheddar slices
  • 4 brioche burger buns, cut in half
  • 200g salsa
  • 1 Romaine lettuce
  • 1 tin of pineapple slices in juice

METHOD:

  1. Put the chicken breasts on an oven tray lined with baking paper.
  2. Drizzle with the oil then rub in the seasoning to evenly cover and pop in the oven for 20-25 minutes.
  3. Add a slice of cheese on top of each for the final five minutes, to melt.
  4. Meanwhile, toast each brioche bun in a griddle pan over a medium heat for a few minutes.
  5. Add a dollop of salsa to your bun, followed by the lettuce, cheesy chicken, more salsa and pineapple ring.
  6. This recipe is the perfect summer twist to every chicken-lover’s favourite burger.

Strawberry Portuguese tarts

Makes 12

These strawberry Portuguese tarts are a summery fusion of Portuguese and British flavours

Preparation time: 35 minutes

Cooking time: 25 minutes

YOU NEED:

  • Oil spray for greasing
  • 120g golden caster sugar
  • 2½ tbsp cornflour
  • 350ml full-fat milk
  • Pinch of salt
  • 4 large egg yolks
  • 2 tsp vanilla extract
  • 1 jar of strawberry jam
  • 1 large handful fresh strawberries to decorate
  • 1 sheet ready-rolled puff- pastry

METHOD:

  1. Preheat oven to gas 6/200C/fan 180C and grease a 12-hole muffin tin with the oil.
  2. Add sugar, cornflour, milk and a pinch of salt to a pan over a medium heat and whisk continuously for five to ten minutes until thickened.
  3. Transfer to a bowl, cool for 20 minutes and whisk in the egg yolks and vanilla before straining.
  4. Cut the pastry sheet in half and place each on top of one another before rolling into a rectangle shape.
  5. Cut into 12 rounds and roll each on a floured surface (approx 12cm) before pressing into each muffin hole.
  6. Add a tablespoon of strawberry jam into each case, fill with the egg custard and bake for 25 minutes.
  7. Top with fresh strawberries and enjoy a summery fusion of Portuguese meets British flavours.
