Spicy prawn noodles
Serves four
Drizzle with soy sauce before serving
Preparation time – 15 minutes
Cooking time – 15 minutes
YOU NEED:
- 300g thin egg noodles
- 2 tbsp sunflower oil
- 2 carrots, cut into thin strips
- 150g sugar snap peas
- 200g bean sprouts
- 1 bunch salad onions, trimmed and sliced
- 300g king prawns, peeled
- 1 tsp Chinese five-spice
- 2 tbsp soy sauce
METHOD:
- Place the noodles in a bowl and cover with boiling water. Leave for ten minutes then drain well.
- Heat the oil in a large non-stick frying pan or wok and fry the carrots and sugar snap peas for three minutes. Add the bean sprouts, onions and prawns, then sprinkle with five-spice, toss and cook for two minutes.
- Add the noodles, stir-fry for a further 2-3 minutes until piping hot, then drizzle with soy sauce and split between four serving bowls.
